Ingredients

  • 6 medium eggs
  • 1/4 cup cottage cheese (hello, creamy protein!)
  • 1/2 cup black beans, drained and rinsed
  • 1 cup baby spinach
  • 1 medium sweet potato
  • 1 avocado
  • 2 tbsp olive oil
  • salt & pepper to taste

Instructions

  • Cut sweet potato in half, brush with olive oil and sprinkle with cinnamon. Cook in 450° oven for 30 minutes or in microwave for 6 minutes
  • Poach 2 eggs in skillet with 1/2" boiling water
  • In a bowl, whisk 4 eggs, salt & pepper and cottage cheese until fluffy.
  • Heat olive oil in a skillet. Add spinach and beans.
  • Pour in egg mixture. Scramble gently until just set.
  • Assemble ingredients on plate and top 2 scrambled eggs with 1 poached egg for extra yum.
  • Serve warm, topped with avocado slices and your favorite sassy seasoning.
