
Creamy Pasta with Shrimp
This amazing recipe is a show-stopper for the family as well as for invited guests. It's quick and easy to make and the compliments just come flowing in. It can be served for lunch or dinner. Just pair it with a piece of garlic bread and you have a delicious dish hat will become a repeat favorite.
Ingredients
- 1.5 lbs. large shrimp
- 2 tbsp. extra virgin olive oil
- 1.5 tbsp. unsalted butter
- 2 tsp. paprika
- 2 tsp. Cajun seasoning
- 3 cloves garlic
- 1.5 tsp. Italian seasoning
- 1 tsp. salt
- 1/2 tsp black pepper
SAUCE
- 6 cloves minced galic (or to taste)
- 1 cup sun-dried tomatoes, chopped
- 3/4 cup vegetable broth
- 1.5 cups heavy cream
- 3/4 cup grated parmesan
- 1 tsp. Cajun seasoning (to taste)
- 1/2 tsp red pepper flakes (optional)
- 1 lemon zest
- 1 lemon (juice only)
- fresh herbs
- salt & pepper
PASTA
- 16 oz. linquini
- 1/2-1 cup reserved pasta water (if necessay)
Instructions
- Peel, devine and rinse shrimp. Dry with paper towel.
- Sauté shrimp & garlic in olive oil & butter.
- Add paprika, Cajun seasoning, Italian seasoning, salt & black pepper.
- Remove to a separate plate.
- Sauté minced garlic, and sun-dried tomatoes in same pan.
- Add heavy cream, Cajun seasoning, parmesan, red pepper flakes, lemon zest and lemon juice.
- Mix well and simmer 5 minutes, adding additional salt & pepper and fresh herbs to taste
- Boil pasta
- Return shrimp to sauce and cook another 5 minutes
- Add reserved pasta water if needed
