Why Black Beans and Crispy Shells Belong in Every Midlife Woman’s Toolkit

Black bean flautas are one of my favorite things to eat for so many reasons: They’re crispy. They’re bold. They’re stuffed with fiber and flavor. And much like the Aging Out Loud woman, they don’t apologize for taking up space on the plate.
Black beans are the underrated powerhouse of the pantry. Full of protein, fiber, and midlife magic. My mom knew how to make them all and they were a staple in our diets. So the next time you want something satisfying, healthy, and undeniably fabulous, skip the drive-thru and make these instead.
Because at our age, if it’s not making us stronger, smarter, or more delicious, it’s not worth our time.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 15 oz can black beans, drained and rinsed
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lime (because you’re fancy)
  • 1/4 cup chopped cilantro (optional)
  • 10-12 small corn or flour tortillas
  • Cooking oil spray or additional olive oil for brushing

Instructions

  • In a skillet, heat olive oil and sauté onion and garlic until fragrant.
  • Add black beans, cumin, paprika, salt, and pepper. Mash lightly with a fork until it’s thick and spreadable but still chunky.
  • Stir in lime juice and cilantro. Let cool slightly.
  • Warm tortillas so they’re pliable. Spoon 2 tbsp of filling down the center of each, roll tightly, and place seam side down.
  • Lightly brush with oil or spray. Bake at 425°F for 15–20 minutes (or air-fry at 400°F for 8–10 minutes) until crispy and golden.
  • Serve with guacamole, salsa, or a dollop of Greek yogurt pretending to be sour cream.

    FINAL THOUGHTS
    I don't know who needs to hear this, but sometimes the most powerful thing you can do in your 50s and beyond is make yourself a snack that crunches louder than your joints, and there's no better choice than black bean flautas.
